Vegetarian Chili

Ingredients

1 tbsp olive oil

1 onion, chopped

2 cloves garlic, minced

1 bell pepper, chopped

2 carrots, diced

2 cans (400g each) diced tomatoes

1 can (400g) black beans, drained and rinsed

1 can (400g) kidney beans, drained and rinsed

2 tsp chili powder

1 tsp cumin

Salt and pepper to taste

Instructions

Heat olive oil in a large pot over medium heat. Sauté onion and garlic until translucent.

Add bell pepper and carrots; cook for 5 minutes.

Stir in diced tomatoes, beans, chili powder, and cumin.

Bring to a boil, then reduce heat and simmer for 30 minutes.

Season with salt and pepper. Serve hot.
